What's Cookin'? Eggplant Pizza Recipe

I know the name isn't too snazzy.  I should've named it something catchier, but it's after 9pm so .... that's all I got!  LOL

Thankfully, the name doesn't have to sound so yummy because the food is!   Here's a super easy dinner to throw together, and it's a great way to squeeze in your veggies.

Slice 1-2 eggplants (depending on the size of your family) 1/4 - 1/2 inch thick.

Brush with olive oil or coconut oil and bake at 350 for about 20 minutes or until crisp.

Pull them out and top them with tomato sauce or pizza sauce, seasonings, cheese, and other desired pizza toppings.  We used turkey pepperoni, although it is a concession for me.  Definitely NOT a whole food.

Bake for another 10 minutes or until cheese is melted.  You could also broil on low for a few minutes.

Enjoy a guilt-free pizza night with the family!

Eat well,

Pam

Great low carb treat. I will definitely be giving egg plant pizza a try. A lot like egg plant parm, without the carb loaded pasta. Thanks for the tip.

That sounds delicious and I bet I could sneak this past my two little picky eaters without them knowing they were eating something healthy :)

I will have to try this on my sisters. I wonder if I grilled the eggplant and then proceeded with the pizza steps how the taste would be changed? I’d love to do eggplants and portabella mushroom pizza for a get together. Amazing idea!

Anything with eggplant in it is always good for me. Your pizza looks really great! A glass of wine sounds good with it too!

The eggplant pizza looks great and so does the wine!

I am buying any eggplant to try these out tomorrow! We have to eat gluten free so this is perfection!

It's definitely not for the eggplant "faint of heart"! If eggplant's not your thing, you probably won't love it because the texture is still there. But I love the idea of grilled eggplant and trying it with zucchini!

Now that's a great idea! I never thought to make this... I wonder if my kids would like it?!

I have been craving pizza for 6 months. I went gluten-free and eat mostly soups, but this will perk up my diet. Thanks for the recipe and delicious looking picture.
