What's Cookin'? Chocolate Nut Clusters

If your current weight loss program doesn't allow for a healthy chocolate fix, then my heart bleeds for you.  Ok, I know Truvia isn't whole foods, but I've done my research -- I'm ok with my findings.  By the way, healthy does not include hydrogenated oils, soy lecithin (GMO), and a host of other ingredients found in most waistline-friendly options marketed to dieters.  To find out more about the plethora of sweetener options out there, follow my blog this week at www.NourishedSkillets.com.  I'll be covering that and much more.  Chocolate ...

Here is a super quick, easy, and healthy way to scratch that chocolate itch!

Melt 2-4 oz of unsweetened chocolate over low heat (I prefer Ghirardelli's unsweetened 100% Cacao).

Grind about 4-5 tsp of Truvia in a coffee grinder and add to melted chocolate (adjust to taste).

Add a dash of vanilla.

Stir in about 1/3 cup cream to the chocolate.  Have no fear, your chocolate might clump up initially.  Just add more cream (heavy cream is best, but use what you have) until it "de-clumps".

Add your favorites nuts and stir.

For a slab, just line a pan with parchment paper and spread the chocolate mixture flat.  For "clusters", use a spoon and create blobs.  Doesn't that sound lovely?  Blobs of chocolate.  Anything chocolate sounds lovely.

Place in refrigerator for an hour or so.  The freezer also works, but makes it a littler more difficult to eat.  I love it regardless.  For an added treat, "roast" your nuts on the stovetop for a couple of minutes with butter and salt.

I love these and how easy the recipe it is. Much better homemade as I usually buy something similar to this in stores. And my kids love to help with anything when I bake, they like to lick the spoons and bowls.

This is perfect - I have some high quality unsweetened chocolate that I want to use soon for a healthy recipe, and haven't found anything I felt like doing, I have Truvia, too and don't feel like using the oven - and this looks very yummy.
