WHAT'S COOKIN'? Amazing Quiche Recipe

There is no simpler meal to throw together in a pinch than Quiche!  It's versatile, goes in the oven in 15 minutes or less, and can easily be doubled (or even tripled) to feed a crowd.  It's also power-packed with nutrients thanks to eggs, one of the most nutritionally perfect foods.


I can't brag on this recipe, even though I have been told repeatedly that I make the BEST quiche, and my friends all ask for the recipe.  My MOM can brag, though, because this is her recipe that I'm passing on to you!  We all thank you, Mom! 

For those of you following Trim Healthy Mama (THM), this is the perfect S meal if you leave out the flour -- or you could sub it out for almond meal.  I don't recommend trying coconut flour in this recipe because it's really thirsty. 

2 Tbsp flour (whole wheat, almond flour, or omit)
4 eggs
1 c. shredded cheddar
1 c. shredded swiss/mozzarella
1.5 c. half-n-half or heavy cream
1/2 tsp sea salt
dash pepper
2 - 9" deep dish pie crusts (omit for S meal unless you make out of almond/coconut flour)

1.  Mix the cheese and flour.
2.  Add slightly beaten eggs and half-n-half to the cheese.
3.  Stir in salt and pepper.
4.  Bake at 350 for 1 hour.

These are just the ingredients for the basic quiche.  Make it your own or use the leftovers in the fridge.  Sauté some peppers and onions with a little turkey bacon.  Cook up some turkey sausage (ok, I don't eat pork but float your own boat) and add some spinach -- just thaw or sauté frozen spinach first because it will make the quiche too watery otherwise.  Add some diced chicken or even some ground beef.  GO WITH IT. 

5.  Bask in the glow of your raving success.  :-)  Serve up with a salad, some fresh veggies, or a little fruit (not you, Trim Healthy Mamas!)  Add some bread for those littles at the table, and you're done.

We are a big quiche family! It's a great Sunday brunch meal and I love that you can change it up just by adding different veggies or meats. I'll definitely be trying your Mom's recipe! :)
