Gooey Chocolate Lava Muffin Recipe

Ok, so they aren't really called "Gooey Chocolate Lava Muffins", but that's pretty much what they taste like.  Well, except the muffin part.  That sounds too healthy.  Except these ARE healthy ... they just don't taste like it. 


Recently I found a book that has changed my life.  Dramatic enough for you?  Truth is truth.  Like many of you, I've battled the bulge since having children.  Ugh.  Those days are over!  This new era is filled with EATING.  All the time.  Whole foods.  Easily and conveniently prepared foods.  Decadent foods (like Gooey Chocolate Lava Muffins).  If you're interested in total food freedom (freedom from fad diets, processed foods marketed as diet food, being unsure what to eat, when and how, then check out www.trimhealthymama.com and change your life).  Ok.  Onto the recipe.

This can be made two ways.  Pick your pleasure:  microwave or oven. 

Disclaimer:  I personally don't like microwaves and don't think they're healthy.  BUT, not everyone agrees and some people don't have the luxury of cooking everything in the oven whenever they want it.  SO, if you choose the microwave, simply add the following ingredients in a coffee mug, mix vigorously, and microwave on high for 1 minute (or a little less for more gooey-ness).  Moving on ....

Preheat your oven to 350.  In a slightly greased (or not, whatever) ramekin, add the following in no particular order:

1 egg
1.5 Tbsp Flax meal
1.5 Tbsp Almond meal
1 heaping Tbsp cocoa powder
2-4 tsp Truvia (yes, the brand is actually important -- not all stevia bakes well)
1/2 tsp baking powder (preferably aluminum free)
1 flat Tbsp coconut oil

Mix!  Pop it in the oven and bake for 12-15 minutes depending on your oven.  You want the top to jiggle just a little bit (this ensures it's moist and gooey, not overcooked.)  If it's fully cooked, you'll have more of an actual muffin texture.  This recipe is actually called "Muffin in a Mug", but by slightly undercooking it, you get Gooey Chocolate Lava.  :-)

To push the decadence over the top, mix up a little non-fat greek yogurt, low fat cream cheese, vanilla and a touch of Truvia.  Add it to the top, and you'll never believe you're eating a nutrient-dense, whole food "muffin".  For those of you sticklers, Truvia is not technically "whole foods" because it has undergone processing.  Hang with me.  It's one of the healthiest sweeteners available, and it tastes great.

Healthy and yummy is a great combination! I try to eat healthy too but living in a city where 'healthy' is not celebrated that much (seriously there are more junk shops of cupcakes and sweet stuff than organic or health shop) it can be tough. I would love to try out this recipe but not sure where I can find Flax and Almond meal and Truvia too. I'll try google them :)

Ok, I'll be clarifying over the next several posts, but the key to weight loss is not overloading your body with fuels -- so you eat fats OR carbs in one sitting, but not both.
