We bought and remodeled a house on the lake last summer, so we always have people over. After eating so much fast food last year while remodeling, I vowed to make as many meals at home as possible. Our guests are used to me using canned good to make quick, but delicious meals. We shared a few of our favorite recipes with some friend this weekend.
This Cornbread taco bake is a recipe that I've been making forever but have never posted. It is extremely easy and I use both canned corn and canned diced tomatoes. I usually make a smaller amount because my two oldest are extremely picky and this is just a favorite for my husband and I. If you want to make it in a 9x13, simply add another 1/2-1lb ground beef and one more box of Corn Muffin mix for the top.
1lb ground beef
1 medium onion
1 packet taco seasoning
1 can corn
1 can diced tomatoes
1 can black beans
1 Package of Corn Muffin mix and needed ingredients to make(milk and an egg for what I need)
Heat oven to 400. Saute onion in heated olive oil. Brown meat and drain grease. Add 1 packet taco seasoning along with 1/4 cup water and mix well over low heat. Add in 1 can corn(drained), 1 can diced tomatoes(not drained), and 1 can of black beans(drained). Stir well and keep on low while you make corn muffin topping.
Mix 1 package of Corn Muffins with needed ingredients(on the back of the box. Pour the meat mixture into the pan and add Corn Muffin mix to the top. Put in oven and bake for 15-20 minutes until the corn muffin mix starts to brown. I top with some sour cream and salsa when serving.
I'm also all about dessert recipes that are easy, but impressive! This pear tart couldn't be any easier, and is extremely yummy. No one ever believes how easy this is to make once they've tasted it. I'm going to warn you that I don't measure very often. The amounts below are approximate measurements - I just kind of sprinkle until I feel its good enough!
1 9inch refrigerated pie crust(at room temp)
2 cans pears
Juice from 1/2 lemon
Zest from 1 lemon
1tsp boiling water
Heat oven to 425. Slice pears from cans. Discard or freeze liquid from cans. Mix pears with cinnamon, nutmeg, sugar, cornstarch, lemon juice, lemon zest.
Put pie crust in a pie plate and put the pears in the center(leave any juice in there for right now). Fold the crust over and pinch any pieces that overlap(crust will not completely cover the pears - there will be a hole in the middle). Pour the rest of the juice from the bowl in the center. Bake for about 20 minutes or until crust starts to brown.
Put the water in glass bowl and throw in the microwave for a few seconds to get it really hot. Mix honey in really well and apply to the top and sides of tart with brush. Let cool for 15 minutes and then its ready! We really like this with vanilla ice cream on top.
After testing a few of our favorites, we also talked about what other creations we used. There are several great recipes on Del Monte's website. One recipe that we talked about was an easy potato soup that you can throw in the crock pot. Simply combine diced potatoes, corn, salt, pepper, and chicken broth to cover. After a few hours, mash the potatoes a little and add whipping cream. Top with sour cream and cheese to serve.
