The Best Buttermilk Pancakes

I used to buy a buttermilk pancake mix that was incredibly good, but starting about a year ago, I couldn't find it in stores anymore. After trying different mixes that just didn't match up, I found a Martha Stewart Recipe that claimed to be "the best", so I had to try them. Sure enough-they totally rock and we make them all the time(the kids and I like chocolate chips in ours)!!

Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons sugar
2 large eggs, lightly beaten
3 cups buttermilk
4 tablespoons unsalted butter, melted, plus 1/2 teaspoon for griddle
Blueberries, chocolate chips, etc for mixing in(optional)

Directions
Heat griddle to 375 degrees. Whisk together flour, baking powder, baking soda, salt, and sugar in a medium bowl. Add eggs, buttermilk, and 4 tablespoons butter; whisk to combine. Batter should have small to medium lumps. We made a few plain ones for my husband and then add in blueberries or chocolate chips for me and the kids!

Heat oven to 175 degrees. Test griddle by sprinkling a few drops of water on it. If water bounces and spatters off griddle, it is hot enough. Using a pastry brush, brush remaining 1/2 teaspoon of butter or reserved bacon fat onto griddle(we spray with Pam). Wipe off excess.

Using a 4-ounce ladle, about 1/2 cup, pour pancake batter, in pools 2 inches away from one other(we just pour out of the bowl until they are the size we want). When pancakes have bubbles on top and are slightly dry around edges, about 2 1/2 minutes, flip over. Cook until golden on bottom, about 1 minute.

Repeat with remaining batter, keeping finished pancakes on a heatproof plate in oven. Serve warm.

This recipe makes a lot of pancakes. We often half the recipe for our family of four. If we want extras to heat up for the kids during the week, then we'll make the full recipe. Enjoy!

Those sound so good! We almost always make our pancakes from a mix...I don't know why I never thought about making them from scratch:)

That's basically my recipe, but mine aren't buttermilk. I mix up a TON of the dry stuff ahead of time, then I just measure out 2 cups and all the wet stuff and make it that way. It saves lots of steps for me!

We eat pancakes for dinner all the time. We love banana walnut ones and strawberry banana ones too. We never try chocolate chip though.

BTW Evan is so cute in that picture. He's getting so big!

I am partial to blueberries and bananas in my pancakes, but I can never get bananas right...they always get too mushy.

I LOVE homemade pancakes. My mom used to make them all the time. I'm a lazy cook and buy the box mix (lol!). Your pancakes look delicious! You can't go wrong with Martha Stewart. Good idea to add chocolate chips to the mix. I may have to give this recipe a try. Thanks for sharing :)

This reminds me of camping when I was a kid. Getting up early in the morning and starting a fire, making the batter and cooking up a bunch of cakes...

these look amazing. i have a recipe that is really good and i use a mix, but add some spices to it to make it a little different.
