I'm "that girl" who would rather eat a bundle of broccoli than the steak that came with the meal. I have never  had a hard time eating my recommended amount of fruits and veggies, but The National Fruit and Vegetable Alliance recently gave America a failing grade for its fruit and vegetable consumption. Only 6% of Americans get the recommended daily servings of vegetables. Birds Eye Vegetables wants to help Americans make sure they eat their daily servings.

I try to put veggies in as many meals as possibly.  Thankfully, my kids like several vegetables, but there are many that they don't like.  Neither like carrots or sweet peas which are two of my favorites.  I've noticed that if I let Evan "help" in the kitchen while preparing meals then he will usually eat what we make.  I also puree several vegetables to add to various meals so they have no idea that they are in there.

I serve at least one green veggie and one orange one at each dinner meal. I serve salads almost every day with lunch. I also make my own veggie burgers that are loaded with different veggies that my family wouldn't usually eat.

One of my favorite ways to incorporate veggies into our meals is to include them in a dish with other ingredients. Chicken or turkey pot pies have carrots, green beans, mushrooms and celery; beef stew has carrots, peas, celery, etc. This way, just about any vegetable can be added. Thanks!

So far, my children eat their veggies just fine so I either make a salad with a meal or simply put a veggie on the side (plain and simple). My husband will usually spice them up but my son doesn't always eat them well with spices.

My favorite way to incorporate vegetables into my meals is to use some recipes from "Deceptively Delicious" by Jessica Seinfeld. My favorite is chicken nuggets with green vegetables in them. You can't taste them, which works great for my very picky 2 year old, and my meat-lovin' husband.

Fortunately incorporating veggies into our meals isn't a daunting task. Lil Man and Lil Bit love their veggies without any special fanfare and we have some form of veggies with almost every meal. During the holidays we had a lot of roasted veggies and veggie trays with ranch dip. They loved them and always ask for more. I guess I'm one of the lucky few :)

We've been really hard-core about not introducing meat into our daughter's diet until she loves eating vegetables. She's good about actually liking to eat her veggies, but my husband recently made her a cheese quesadilla, and just threw some vegetables in there while he was at it!

I cook with lots of vegetables...I add them to soups (blended to make it creamy), dice them up fine and add to hamburger and pastas. Mix them in with cream cheese and make dips. I even add vegetables to my potato and macaroni salads! But my oldest likes them best steamed with cheese melted over them!

I try to include veggies in all of our meals. Omelets for breakfast for example, those are yummy loaded with veggies! I love adding veggies into our salads and of course we always have a veggie side for dinner :) Sometimes with the kiddo's I have to be sneaky about it though ;)

I love to put a box of frozen veges in my egg dishes such as omlettes and scrambled. I also add frozen veges to my meatloaves and soup meals.
