Pumpkin Spice Muffin With Cream Cheese Frosting OR Streusel-Topped Recipe

It has finally cooled down here this past week and I'm starting to bake more. I was sad when I heard there was going to be a shortage of canned pumpkin this year, but I finally found some at Walmart and stocked up! I have always enjoyed making easy Pumpkin Spice Muffins and while reading my Southern Plate cookbook, I was reminded that it is time to make these.  It really isn't fall until we have these moist muffins(or cake).  They also had the Streusel topping recipe that I've never used with these(I normally use a cream cheese icing), but the Streusel topping would  be yummy too.

-1 box spice cake mix
-15 ounce can of pumpkin
-1/2 cup water

Preheat oven to 350 and grease 12-cup muffin pan, or other pans like I used. Mix ingredients until well blended. Fill cups 1/2-2/3 full(if using streusel topping-sprinkle on top of muffins and pat down slightly before baking). Bake for 20 minutes or until a toothpick inserted in center comes out clean. OR you can pour into a 13x9 pan and bake it as a cake.

Cream Cheese Frosting

- ¼ cups Softened Butter
- 4 ounces, weight Cream Cheese
- ½ pounds Powdered Sugar
- ½ teaspoons Vanilla

Mix all ingredients on high until soft and whipped. I like to eat these muffins when warm, so I put icing on the muffins shortly after they come out of the oven and it melts onto them.

Streusel topping
-1 cup all-purpose flour
-1 cup brown sugar
-1 stick margarine, softened.

Stir together the flour and brown sugar, breaking up the lumps. Cut in margarine. Spoon or sprinkle over muffins and pat down slightly. Bake for 20 minutes or until a toothpick inserted comes out clean.

These are incredible easy and inexpensive to make, but they are so yummy and moist!

There's a shortage of pumpkin again this year!??? I remember last year it was the same thing, but we found some at walmart too : )

I have a bunch of pumpkin I harvested myself this year. I have two jars left over in my fridge I need to use up. ;)

Oh wow those seriously look delish. I am getting such great ideas from you for this holiday season. My family is really picky and I think they would actually eat these. I want some right now. Lol. I will be making some to take to our holiday gatherings, that's for sure.
