I'm not sure if this is a "southern only" kind of recipe, but it is one that my family has been making forever. It is in our family cookbook as a Tomato Pie, but we call it a Tomato Pizza. My deeper pie pan is in storage, so I had to use this smaller one.
What you'll need:

1 (9 inch) unbaked pie crust
3-4 large tomatoes, peeled and sliced(I used 3 for this pie pan)
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon dried basil
1/4 teaspoon garlic powder
3/4 cup mayonnaise
1 1/4 cups shredded Cheddar cheese
Preheat oven to 375 degrees F and Bake pie crust for 10 minutes. Take out of the over and cover bottom of pie crust with a layer of tomato slices. In a small bowl, mix together salt, pepper, basil, and garlic powder. Sprinkle half of mixture over tomato slices.

Layer remaining tomato slices in pie crust. Sprinkle with the rest of seasoning mixture. In a medium bowl, mix together mayonnaise and cheese. Spread mixture evenly over top of pie.

Reduce oven to 350 degrees F. Bake pie for 30-35 minutes or until cheese mixture gets darker. I've seen some people leave it in there for longer-but I don't like that burnt cheese taste.

This is a really simple recipe that helps me make good use of my tomatoes and the leftovers are great for lunch!

I made a very similar tomato pie just a couple of days ago. We love this when we are up to our ears in tomatoes from our garden. It's yummy!
